A good pot of tea depends as much on brewing it correctly as on the tea itself. Here are a few simple steps you can follow at home for a deep, clear and fragrant "rabbit's blood" ruby-red brew.
1. Use fresh water
Do not reboil water that has already been boiled. Fresh water, low in limescale if possible, noticeably improves the colour and aroma of the tea.
2. Warm the teapot
Before adding the tea, rinse the upper teapot with a little boiling water to warm it. A cold teapot slows down brewing.
3. Get the amount right
About one dessert spoon of tea per person is a good start. If you like it strong, you can add a little more.
4. Brew patiently
After pouring boiling water over the tea, leave the teapot on low heat for 12-15 minutes. Try not to open the lid during this time.
5. Don't let it stand too long
Tea left on the stove for too long becomes bitter. Drinking it within the first hour after brewing lets you enjoy its aroma at its best.
Pour the brew into the glass first, then add hot water, adjusting the colour to your taste. Enjoy!
